Local Chef Gives Vegan-Friendly Holiday Menu Ideas

'Tis the season for Turkey. Wait a minute -- not if you are vegan, a person who eats no food originating from an animal. So what happens if you are not vegan, but some of your holiday guests are? A local chef offers some culinary advice.
Executive chef of the Lowe's Philadelphia Hotel, Tom Kriebal, says there's no need for your vegan guests to go hungry:
"Any kind of different vegetables are good. Around Thanksgiving, of course, root vegetables are plentiful, so you can do roasted vegetables: turnips, parsnips, carrots and beets -- there's an infinite supply of vegetables you can do."
You do have to watch how you season your food:
"What most people will do is use butter with salt and pepper on there, but what you can do is use a flavored oil to give it a little richness that you would have with the butter."
Kriebal says your non-vegan guests may enjoy these dishes too!
"Yeah, absolutely. Any kind of natural fats oils such as olive oil are a lot more healthy than butter. They might like it and realize it's a lot healthier for them"
