Carving a pumpkin? Save your seeds. Some pumpkins are hybrids, so the pumpkins you grow may not look like the one they came from, but try it and see what you get.
Seeds need to be completely clean and dry to prevent mold growth. So, rinse off all pulp and slime, pat with a towel and spread them out on a tray for a week or so to dry, and then store them in an envelope in a cool, dry, dark place until planting time.
Since pumpkins are big sprawling plants, you won’t need many – so you can just save the largest seeds for planting and eat the rest.
Toss the cleaned seeds in oil, spread them on a cookie sheet and toast in a 350F oven for a half an hour or so. Sprinkle on salt and spices, or even brown sugar and pumpkin pie spice. To make a bigger Halloween snack, mix them in with nuts or a bowl of freshly popped popcorn.
